Makes 2 dozen cookies.
Ingredients
- 2 1/2 cups rice crispy cereal
- 3 cups powdered sugar
- 1 1/2 cups smooth peanut butter
- 1/2 cup (1 stick) butter
- 2 (12 oz) bags chocolate chips
- Wooden skewers
Directions
- In a large bowl, mix the rice crispies and powdered sugar together; set aside.
- In a medium saucepan, melt the peanut butter and butter over medium heat.
- As soon as it’s a uniform liquid, remove from heat and pour over the rice krispy mixture, stirring until well combined.
- Form into 1 1/2 inch balls, place on a cookie sheet, and refrigerate to cool.
- Melt the chocolate chips in the microwave (start with one bag), stirring every 20 seconds so it doesn’t seize.
- Put each ball on a skewer and dip in the melted chocolate. Remove from skewer and place on wax paper.
- Refrigerate until set.
