Makes 2 dozen cookies.

Ingredients

  • 2 1/2 cups rice crispy cereal
  • 3 cups powdered sugar
  • 1 1/2 cups smooth peanut butter
  • 1/2 cup (1 stick) butter
  • 2 (12 oz) bags chocolate chips
  • Wooden skewers

Directions

  1. In a large bowl, mix the rice crispies and powdered sugar together; set aside.
  2. In a medium saucepan, melt the peanut butter and butter over medium heat.
  3. As soon as it’s a uniform liquid, remove from heat and pour over the rice krispy mixture, stirring until well combined.
  4. Form into 1 1/2 inch balls, place on a cookie sheet, and refrigerate to cool.
  5. Melt the chocolate chips in the microwave (start with one bag), stirring every 20 seconds so it doesn’t seize.
  6. Put each ball on a skewer and dip in the melted chocolate. Remove from skewer and place on wax paper.
  7. Refrigerate until set.
