Sweet and salty peanut brittle with the perfect candy crunch. Have all ingredients measured out and ready to go, since this method requires you to react quickly — a candy thermometer is recommended.
Ingredients
- 1 cup white sugar
- 1/2 cup light corn syrup
- 1/4 cup water
- 1/4 tsp salt
- 1 cup peanuts
- 2 tbsp unsalted butter, softened
- 1 tsp baking soda
Directions
- Have all ingredients measured out before starting. Grease a large rimmed baking sheet and set aside.
- Combine sugar, corn syrup, water, and salt in a heavy 2-quart saucepan over medium heat. Stir until sugar dissolves and the mixture comes to a boil, about 5 minutes.
- Stir in peanuts and set a candy thermometer in place. Continue cooking, stirring occasionally, until the temperature reaches 300-310°F (150-155°C).
- Remove from heat. Quickly stir in butter and baking soda, then immediately pour the mixture onto the prepared baking sheet. Use 2 forks to quickly lift and pull the mixture into a 12x14-inch rectangle. Let cool until completely firm, at least 30 minutes.
- Use a mallet to break the peanut brittle into pieces.
Notes
No candy thermometer? In step 3, drop a small amount of the boiling syrup into a bowl of cold water — if it forms hard, brittle threads, it’s ready.
