Mashed Potato Bake

Ingredients

• 4 cups frozen hash browns (southern style, not shredded)
• 1 package Butter & Herb instant mashed potato mix
• 1 stick butter, softened
• 4 oz cream cheese, softened
• 1 cup shredded Monterey Jack cheese
• 1/2 cup sour cream
• 1/2 tsp garlic salt
• 1/2 tsp salt
• 1/2 tsp pepper
• 2 cups boiling water
• 2 cups French’s fried onions

Directions

1. Boil the frozen hash browns for about 5 minutes. Drain, reserving 2 cups of the water.
2. In a large bowl, mix together all other ingredients except the fried onions.
3. Add the hash browns and stir. Pour in the reserved boiled water and stir.
4. Pour into a greased casserole dish and bake at 350°F for 35-45 minutes.
5. Sprinkle the fried onions over the top and bake an additional 5-8 minutes, until golden brown.
